Finish grade is selected for even color and limited mineral streak. It is what you want on a clear or light stain.
Value grade allows more color variation, small tight knots on designated species, and is the right call on a painted frame or a rustic package.
Cherry will darken. Hickory will contrast. We do not bleach those facts out of the board. If a client wants a uniform walnut, specify sequenced veneer, not a mixed solid run.
